Spicy Pickled Onions

This is what you crave, you want it, I want it, everyone wants it.  It’s easy to make and adds that extra flavor you didn’t even know you were missing.  Make it and just let it chill in the fridge then put it on stuff you want to taste good.

Ingredients

  • 1 red onion, sliced thin

  • 1 cup red wine vinegar

  • 1/3 cup sugar

  • 2-3 jalapenos, stemmed, seeded, and sliced into rings

  • ½ tsp salt

Throw the onions into a mixing bowl then bring the other ingredients to a simmer in a medium saucepan over medium-high heat. Once it’s simmering, turn off the heat and pour it over the onions.  Make sure everything gets coated then cover loosely with foil. Check on it every now and then as it cools and make sure all the onions get the vinegar mixture all over them.  With God as my witness, this can go in the fridge and survive quite some time.
