Chicken with Mashed Potatoes and Kale

This is the third in a series of attempts I’m making to replicate meal delivery recipes on my own for anything approaching the same cost and perceived quality of those services.  This one is as basic as it gets on the surface: chicken, potatoes, and greens.  It’s sautéed chicken thighs with mashed red potatoes (SKINS ON TO SHOW I’M HARD CORE) and sautéed kale with cremini mushrooms.  This is a pretty easy recipe that doesn’t take much work and lets you mix in some healthy shit into your weekly diet mostly filled with burritos and meatball subs. I categorize meals like this as “California Bistro Shit.”

Ingredients

  • 2 boneless, skinless chicken thighs, patted dry and salted
  • 10 oz red potatoes, diced rough
  • 4 oz cremini mushrooms, sliced thin
  • 1 bunch kale, stems removed and chopped rough
  • 1tbsp Herbs de Provence
  • 3 tbsp all purpose flour
  • 2 tbsp butter
  • 2 tbsp crème fraiche
  • 2 tbsp white wine
  • ¼-cup water

Bring a small pot of water to boil and then add the potatoes.  Cook until softened then drain and add to a bowl with the butter, half the Herbs de Provence, and any extra crème fraiche you’d like.  Use a fork to mash it all together. Add salt and pepper to taste.

Place the flour on a plate and put the chicken in there, coat it all with flour.  Bring the olive oil up to speed by adding it to a large sauté pan and heat over medium-high heat until just smoking.  Add the chicken and cook until done, about 5 minutes per side. Remove from the pan to a plate.

Add the mushrooms, salt and pepper and cook until softened, about five minutes.  Then add in the kale, crème fraiche, water, half the Herbs de Provence, and white wine (the recipe wants you to use Verjus Blanc but that shit is a racket). Cook until the kale softens and the it seems like something you’d want to eat.

Put all the shit on a plate and eat it.

All told, the ingredient cost breakdown is as follows:

  • Chicken: $5.63
  • Creme Fraiche: $5.99
  • Mushrooms: $2.99
  • Red Potatoes: $1.89
  • Kale: $2.99
  • Everything else: already had it suckers!

What's the final total? $19.49  

My first victory! Plus it actually made three meals (Gina has lunch tomorrow). That means the per unit cost is actually $6.50 or so. SUCK IT.
